Brunching Like A Bermudez: Shrimp & Grits

Cheesy creamy grits topped with juicy shrimp in a savory sauce! This southern favorite satisfies my almost never ending craving for seafood, gives all the down home comforts of Georgia, and is definitely worthy of being brunch favorite!

TOTAL COOK TIME:

SHRIMP INGRIEDIENTS:

1 pound of shrimp, peeled and deveined

1 red bell pepper

1 cup of finely chopped onion

1/2 cup of seafood stock

2TBSP of olive oil

1/2 tsp of pepper

1/2 of salt

1/2 tsp of chili powder

1/2 tsp of paprika

1tsp of minced garlic

3/4 tsp of Old Bay seasoning


GRITS:

3/4 tsp of Lawry's seasoning salt

3tsp of unsalted butter

1- 1 1/2 cup of a mix of pepper jack & sharp cheddar cheese

1 cup of grits

4 cups of water


DIRECTIONS:

- In a hot pan, drizzle your olive oil and add pepper and onion. Season with salt, pepper, then saute for about 5 minutes until soft. Then add garlic and cook with it for 1 minute.

-Add 1/4 cup of your seafood stock, it will boil up, let it do so for 1 minute. Take off heat and set aside.

-In a separate skillet, add olive oil to hot skillet and throw in your raw shrimp. Season with old bay, paprika, and chili powder. Cook until it goes from translucent to pink , so around 5 minutes. Add into other skillet that has the pepper and onion. Add in your last 1/4 cup of seafood stock, then heat and stir all together for 2-5 minutes, just to combine flavors and it will be ready and smell heavenly!

-Taste to be sure it is, salted and peppered to your liking.Keep in mind shrimp is salty naturally and so is cheese, so tasting towards the end ensures all the salt in the shrimp is released out and that you aren't overly salting as you go.

-In a separate pot, mix 4 cups of water and your Lawry's seasoning , bring to boil.

-Add your grits, and cook for 15 minutes stirring as it cooks so it doesn't stick to the pan. In the last 5 minutes add your butter and if necessary a few TBSP of water. Once they are to the desired texture, meaning no longer gritty but soft, and done cooking, mix in ,with a rubber spatula, your cheese. Add a little and let it melt and then stir. Repeat until all the cheese is added.

-Serve with your cheese grits on the bottom and layer your shrimp on top, barricade yourself in a closet so you can eat as ravenous and selfishly as you want without being judged, and then take a nap after! Add crispy bacon to the top or chicken sausage to the shrimp mixture for extra flavor and heartiness!
