Fisherman's Soup

This one goes out to all my seafood lovers, who know how to throw down in the kitchen! A savory tomato based soup with juicy shrimp, tilapia, and clams. It's a throw it all in one pot dish that you can jazz up by adding squid, mussels, or crab. Served with toasted buttered bread! Your stomach will thank you!

Prep time: 10 minutes

Cook time: 25-30 minutes

Ingredients:

-1 1/2 TBSP of butter or olive oil

-1 cup of onion

-1 cup of bell pepper (green or red, your choice)

-2 TBSP of minced garlic

- 1 cup of dry white wine

-2 cups of seafood stock or chicken stock

-28 ounce can of crushed tomatoes ( I used Cento brand)

-13 ounces of minced clams ( basically 2 small cans), without the juice

-4 cups of peeled and deveined shrimp

-5- 6 tilapia filets, chopped into 1 inch pieces

- 1/4 of a lemon

- 1TBSP of oregano

-2 tsp of chili powder

-2tsp of Old Bay seasoning

- 5 medium red potatoes, cubed and peeled

*Keep your salt & pepper and desired amount of parsley on stand by*


For this recipe you can also add :

-a dash of cumin if you feel you are missing some warmth.

-capers for a little bite and tang

-carrots to make it even more hearty

-or various other seafood, i.e. squid, crab meat, or mussels . just because you can!


RECIPE:

>In a large pot, on medium-high heat, melt your butter. Add your onion, bell pepper, parsley and sauté for 2 minutes. Then add your clams and garlic and cook for 1 minute. Now, we want to add our liquid so we want to add 1 cup of our stock ( seafood or chicken) and 1 cup of our white wine. Then, stir in your whole big old can of crushed tomatoes. Add salt and pepper, then bring to a boil.

>Once at a boil throw in your potatoes and cover with a lid, let boil for 5 minutes then bring to a simmer for another 10 minutes and let all those flavors combine and slowly soften those potatoes

> In a separate skillet, add a little olive oil and throw in your tilapia, season with Old Bay seasoning, chili powder, salt, and pepper and cook until it's about half done ( I cooked mine then furiously attacked it with my spatula to chop it up after) .You dont want to fully cook the tilapia because it will finish in the pot of soup but you do want to get the gray off of it so at least 5 minutes. Add your tilapia to your soup.

> In same skillet cook your shrimp with salt, pepper, and Old Bay seasoning until it's gone from gray blue to light pink, again not all the way, so another 5 minutes. Then add to soup pot

>Now that all your seafood is in your pot, add a squeeze of your lemon and the last 1 cup of stock. Let simmer on medium heat, but not yet boiling for about 7- 10 more minutes until you potatoes are nice and soft and all your seafood definitely should be fully cooked. Taste and adjust salt and pepper ratio to your liking.

> Serve with buttered toasted bread and go to bed, full and happy!
